Pumpkin cupcakes recipe for a Thanksgiving dessert

Okay, I couldn’t resist a last minute idea for a Thanksgiving dessert. This easy Thanksgiving recipe is easy to make. It is a pumpkin cupcake recipe that takes only a few minutes but is delicious and will impress your guests.

One of the concepts I discuss at Budget Bash is making your parties as stress-free as possible. This Thanksgiving dessert is an easy Thanksgiving recipe and I made these cupcakes just a few weeks ago and they came out great.

This pumpkin cupcakes recipe I took from Real Simple magazine and slightly modified it.

1 18.5 oz box yellow cake mix (plus ingredients listed in package directions)
Cinnamon, ginger and nutmeg to taste – In general, I use about:
1 teaspoon of cinnamon, ½ teaspoon of ginger and ¼ teaspoon of nutmeg
1 15 oz can pumpkin puree
12 oz cream cheese (stick form, not whipped) – room temperature
6 oz butter at room temperature
2 cups of powdered sugar
½ teaspoon vanilla
½ teaspoon lemon juice

Heat the oven to 350 degrees Fahrenheit. Use two 12-cup muffin tins and cover with paper cupcake holders. Prepare cake mix as directed but with the following changes:

Add the cinnamon, ginger and nutmeg to taste and substitute the can of pumpkin puree for the water indicated in the package directions.

Pour batter into cupcake holders halfway and bake for about 18-22 minutes or until done then cool.

Meanwhile, combine butter and cream cheese and beat until smooth. Make sure they are both at room temperature so the icing is not lumpy. Add the sugar and beat until smooth. Add the vanilla and lemon juice and mix.

Keep in mind that everyone has a slightly different take on cream cheese frosting so you may want to add more sugar or cream cheese, it’s up to you. Once the cupcakes cool, frost and serve.

You can put pumpkin caramels on top of the cupcakes for an added touch of decoration.
